PRESENTER: Dr. Gertrude Ecklu-Mensah, University of California

“One Size Fits None: From Diet-Microbiome Interactions to Individualized Dietary Recommendations”

Dr. Gertrude Ecklu-Mensah holds a Ph.D. in Biochemistry and received additional training in Molecular Biology and the Immunology of Infectious Diseases at the University of Ghana and the University of Copenhagen. She is currently an Assistant Project Scientist in Dr. Jack Gilbert’s lab at UC San Diego, where she conducts research at the intersection of nutrition, the microbiome, metabolism, and chronic disease.

Her work focuses on understanding how diet–microbiome interactions can be harnessed to improve gut, metabolic, and chronic health in a more precise and targeted way. With more than two decades of combined academic and industry experience, she has led both laboratory- and clinic-based studies. She has authored and contributed to numerous high-impact publications and successful grant proposals. Her expertise includes project management, clinical research, scientific writing, immunology, molecular epidemiology, cell biology, bioinformatics, multi-omics analysis, and data science.
